Key Responsibilities

• Key Responsibilities – CDP (Continental Cuisine)
• Lead and supervise the Continental kitchen section during daily operations and service.
• Prepare and oversee Continental dishes as per standard recipes and presentation guidelines.
• Ensure consistency in taste, quality, portioning, and presentation.
• Manage mise en place and ensure all ingredients are prepared before service.
• Guide and supervise Commis 1, 2 & 3 and other kitchen staff.
• Monitor food quality, freshness, storage, and proper FIFO practices.
• Ensure compliance with food safety, hygiene, and HACCP standards.
• Coordinate with the Sous Chef/Executive Chef for smooth kitchen operations.
• Maintain proper stock levels and communicate shortages or requirements.
• Control food wastage and maintain portion control.
• Handle kitchen equipment safely and ensure the workstation is clean and organized.
• Support menu planning, new dish development, and recipe standardization when required.
• Maintain smooth and timely food service during peak operations.
